Sick Day Oxtail Bone Broth
A backup for the days when no one feels like eating.
This is one of the simplest things I keep in my fridge - something warm, gentle, and easy to take a few sips of when appetite is low.
I batch this once and use it throughout the week - you can have it on its own or as the base for simple meals like noodles or soup.
Ingredients:
- 1kg oxtail pieces (blanched)
(you can substitute with other beef bones)
- 2 onions, peeled and halved
- 8 garlic cloves, peeled and smashed
- 1 thumb-sized ginger, sliced
- 1 tsp whole black peppercorns
- 1 tsp salt (or to taste)
- 2.5L water
Instructions:
1. Clean the bones
Trim off excess fat from the oxtail.
Blanch in boiling water for 2–3 minutes.
Remove, rinse and scrub clean.
2. Build the broth
Add all ingredients into a pot with 2.5L water.
- Pressure cooker: Pressure cook for 1 hour, then allow natural release.
- Stovetop: Simmer on low for 8 hours. Top up water as needed.
3. Strain
Strain the broth and separate from the meat.
Set aside the meat for other meals, discard bone and cartilage.
4. Store
Let the broth cool completely.
- Refrigerate for up to 1 week
- Freeze for up to 3 months
Once chilled, a layer of fat will solidify on top.
Remove and discard or save it for cooking.
