Salmon Ochazuke with Roasted Hojicha (Simple Japanese Tea Rice)
A simple, light bowl I come back to when I want something warm, nourishing, and low effort.
Ingredients:
1 salmon fillet
1 tsp salt
1 tbsp sake (or cooking wine)
1 tsp soy sauce
To serve:
1 bowl cooked white rice
POKKA Houjicha Roasted Tea
Shredded seaweed (nori strips)
Sesame seeds
Furikake (optional)
Togarashi (optional)
Spring onions, sliced
Instructions :
- Prepare the salmon
Rub the salmon with salt and sake. Let it sit for 15 minutes.
Discard any excess liquid and lightly pat dry.
Rub the salmon with soy sauce. - Cook
Air fry at 180°C:
5 minutes for medium
7–8 minutes for well done
(Adjust depending on the thickness of your salmon.) - Assemble
Place warm rice into a bowl and gently shape it.
Add the cooked salmon on top, breaking it slightly for texture.
Sprinkle over seaweed, sesame seeds, and furikake if using. - Finish
Pour over the houjicha tea (warm or chilled, both work).
Garnish with spring onions and a light sprinkle of salt.
Add togarashi if you like a bit of heat.
Notes:
You can enjoy this with the tea warm or chilled, depending on your preference.
Keep it simple - the hojicha adds a gentle roasted depth without needing much seasoning.
This is one of those meals that feels light, but still really satisfying.
What I Used to Make This
These are the tools I use and love. Some links are affiliate, thank you for your quiet support 🤍
Roasted Tea
POKKA Houjicha Tea
Deep and nutty roasted flavours from this Japanese tea. No sugar, no preservatives and full of natural antioxidants
Salmon trout
Fresh Norwegian Fjord Salmon-Trout 三文鱼
A cousin of the usual Norwegian Salmon that is commonly sold in Singapore. Its flesh boasts a red-orange tone, as compared to the pale-pink of the latter and also has a firmer texture
Non-toxic swap
Glass Air Fryer
I chose a glass air fryer to avoid non-stick coatings. It’s a cleaner, low-tox alternative that lets you actually see your food as it cooks. Perfect for quick dinners, toddler meals, or when I need to walk away and let something crisp quietly on its own
non-toxic swap
Air Fryer Tray Insert
I use this to cook marinated salmon in the airfryer. Made from food-grade stainless steel, with an optional rack for crisping or roasting. A non-toxic alternative to silicone baskets and wax paper liners
The 15cm size fits perfectly in the Mayer glass air fryer
Non toxic swap
Bamboo Chopping Board
I swapped out all our plastic cutting boards for wood and haven’t looked back
It’s a simple, non-toxic upgrade that’s gentler on knives and free of microplastic wear. This one’s sturdy, light, easy to clean, and actually looks nice on the counter too
