Super Simple Korean Seaweed Soup (Miyeokguk)
A super simplified version of Korean Seaweed Soup (Miyeokguk). So comforting and healing, a soup I make on repeat.
Ingredients:
- A little bit of dried seaweed (miyeok or wakame)
- 3 cloves garlic, minced
- Sesame oil
- 800ml of beef stock or water
- 2 korean stock coins (optional)
- Fish sauce, to taste
Instructions:
- Soak dried seaweed in water for 10 minutes until softened.
Drain, squeeze out excess water, and use scissors to cut into shorter lengths. - Heat oil in a pot over medium heat.
Add minced garlic and stir fry until fragrant. - Add the rehydrated seaweed and sauté for about 1 minute.
- Pour in water or beef stock.
Add Korean stock coins if using.
Bring to a gentle boil, then simmer 10 mins. - Add fish sauce to taste.
- Drizzle a little sesame oil before serving.
