My go-to express noodles for weekends when everything feels a bit out of routine.

Healthy Instant Noodles in 10 Minutes

This is one of those meals I make when I need something fast, warm, and nourishing without overthinking. It comes together in one pot, uses simple ingredients, and still feels like a proper meal, not just instant noodles.

Ingredients:

Serves 2

For the soup
800ml water
1 tbsp chicken stock paste or 1 stock cube

For the pork
300g minced pork
1 tbsp light soy sauce
1 tsp sesame oil
1/2 tsp sugar
1 tbsp corn flour
Dash of white pepper

For the bowl
1 packet noodles of choice
A handful of quick cooking leafy greens (we like round spinach)

Instructions :

  1. In a bowl, mix minced pork with soy sauce, sesame oil, sugar, white pepper and corn flour. Set aside.
  2. Bring 800ml water to a boil. Add chicken stock paste or stock cube and let it dissolve.
  3. Once simmering, spoon in the minced pork bit by bit. No need to shape. Cook until the pork floats and is cooked through.
  4. Add noodles and cook according to package timing.
  5. When noodles are almost done, add leafy greens and simmer until just cooked.
  6. Serve with a drizzle of sesame oil.

To serve (adults)
White pepper
Light soy sauce with sliced chilli for adults
