Crispy Air Fryer Chicken Wings (No Marinade, Extra Crunch Method)

Crispy without deep frying, no marinades, no heavy sauces. Simple savoury wings with a light, crackly texture.

A hit with my kids! Takes a little bit of extra work but it was worth it seeing them finish off the entire plate.

Crispy without deep frying, no marinades, no heavy sauces. Simple savoury wings with a light, crackly texture.
Feel free to serve with hot sauce for the adults!

Ingredients:

Chicken
- 600g middle chicken wings

Dry base
- 1 tsp baking powder
- Pinch of salt

Seasoning
- Garlic powder
- White pepper
- 1/2 tsp salt

Coating
- 3 tbsp cornflour
- 1 tbsp rice flour
- Pinch of salt
- A little water (to form clumps)

To serve
- Hot sauce / chilli sauce for adults
- Japanese mayo for kids

Instructions :

Step 1 - Dry base (don’t skip)
Pat wings dry well.
Toss with baking powder and a pinch of salt.
Lay on a rack and refrigerate uncovered for at least 4 hours, or overnight.

Step 2 - Season (keep it dry)
Add garlic powder, white pepper and salt salt.

Step 3 - Craggly coating
Mix cornflour, rice flour, and salt.
Sprinkle in a little water and mix until small clumps form.
Toss wings in the mixture so the coating sticks unevenly.

Step 4 - Air fry
Lightly spray with oil before cooking and once more halfway through
190°C - 10 minutes, skin side down
Flip
200°C - 12 minutes skin side up

Step 5 - Serve
Serve as is for kids (JieJie liked hers with Japanese mayo)
Add your favourite hot sauce or chilli sauce for adults
