Chicken Macaroni Soup (Comfort in a Bowl)
This is my go-to when someone’s feeling under the weather or I just need dinner to make itself. It’s a one-pot, toddler-approved meal made with real aromatics and a whole chicken.
Comforting, clean, and nourishing without any stock cubes or shortcuts.

Ingredients:
- 1 whole chicken, cut into parts
- 1 onion, chopped
- 1 slice ginger
- 3 cloves garlic, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 tbsp olive oil
- 1 tbsp butter
- 1L water
- Macaroni, cooked separately
- Leafy greens (optional)
- Soy sauce, salt, sugar (to taste)
Instructions:
1. Sauté garlic, ginger, onions, carrots, and celery in olive oil until browned
2. Add 1 tbsp butter and stir to combine
3. Add 1L water and bring to a boil
4. Add chicken pieces and pressure cook for 20 minutes, allow natural release. If cooking on the stove simmer for at least 1 hour
5. Remove and shred the chicken meat Season lightly with soy sauce and sesame oil
6. Season the soup with soy sauce, salt, and sugar to taste for adults. I recommend seasoning it more strongly as the taste will get diluted after being mixed with the plain pasta and veggies
7. Serve over cooked macaroni and blanched leafy greens — or cook the pasta and veg directly in the soup (beware of bones)
👶🏻 Baby-Friendly Tip
Serve shredded chicken with unseasoned broth, soft veggies, and pasta for toddlers. You can also give a whole drumstick for baby-led weaning.
