3 Levels of Bone Broth
Chicken feet bone broth concentrate.
From nourishing soup to wobbly jelly to a concentrated freezer cube. One pot of chicken feet, taken three different ways depending on how far you want to go.
Ingredients:
- 1kg chicken feet, blanched
- 300g pork skin
- 1.5 litres water
- 1 carrot, cut into chunks
- 2 onions, peeled and halved
- 6 garlic cloves, smashed
- 4 slices ginger
- 1 tbsp whole white peppercorns
- 1 tsp salt
- Spring onion stalks or vegetable scraps, optional
Instructions :
Level 1 - Everyday Bone Broth
- Add all ingredients to a pressure cooker.
- Pressure cook on high for 30 minutes, then allow the pressure to release naturally.
- At this point, you have a light chicken feet broth that's ready to use as soup or as a base for noodles, porridge and other family meals.

Level 2 - Gelatin-Rich Bone Broth
- Pressure cook the same broth for an additional 1½ hours, for approximately 2 hours total cooking time.
- Allow the pressure to release naturally.
- Strain out all the solids.
- Once chilled, this broth should set into a soft, wobbly jelly thanks to the gelatin released from the chicken feet and pork skin.
Level 3 - Bone Broth Concentrate
- Bring strained broth to a strong simmer.
- Reduce uncovered over high heat until you have approximately 1 litre remaining, or until the broth coats the back of a spoon.
- This took me almost 50mins of simmering
- Pour into containers or silicone moulds and refrigerate overnight.
- Once chilled, you'll have a much firmer, concentrated broth that can be portioned and added to meals as needed.
- For longer storage, transfer the portions to the freezer.
How to Use It
Level 1 - Broth
Drink as soup or use for noodles, porridge and soup-based meals.
Level 2 - Jelly
Spoon directly into stir-fries, sauces, soups or anything that needs a little extra broth.
Level 3 - Concentrate
Keep portioned in the freezer and add a cube whenever you need a quick broth base. Dilute with hot water to taste depending on how concentrated your batch becomes.
