Salmon Soba Noodles
This is one of our easiest 15-minute meals.
My kids call it cold noodles. We usually top it with a little tobiko for extra texture (mostly to encourage my picky eater to finish his food… it’s his favourite).
The whole dish comes together fast: just pop the salmon in the air fryer while the noodles boil, and you’re done. It’s quick to assemble, toddler-friendly if you keep it simple, and full of good fats for growing brains and tired parents, too.

Ingredients:
• 2 salmon fillets
• 1 tbsp mirin
• 1 tbsp sake
• 1 tbsp soy sauce
• 1 bunch soba noodles
• Soba dipping sauce
Optional toppings:
• Tobiko (flying fish roe)
• Spring onions, finely sliced
• Blanched veg
• Togarashi
Instructions:
1. Marinate the salmon in a mix of mirin, sake, and soy sauce for a few mins
2. Cook the salmon in an air fryer at 180°C for 7-8 mins depending on size and preferred doneness
3. Boil soba noodles according to packet instructions. Rinse in cold water to stop cooking
4. Plate noodles with toppings and flaked salmon. Serve with dipping sauce
👶🏻 Toddler-Friendly Version:
Skip the sauce and spice. Serve plain soba with flaked salmon and soft greens on the side
