Lazy Veggie Cubes

A quick, no-fuss way to make sure vegetables always make it into dinner. Perfect for when you need to add some vegetables to meals but can't be bothered to think. This also works really well for picky eaters and babies.

Most veggies will work for this recipe, it's also a great way to clear out any randmo veggies hiding in the fridge. Just blend, freeze, and drop them straight into soups, sauces, or stir-fries for an instant boost of flavour and nutrition

Ingredients:

- 1 zucchini
- 1 broccoli + stems (don’t waste!)
- 6 shiitake mushrooms
- 1 onion
- 3 cloves garlic
- 1 large carrot

(feel free to use any veggies!)

Instructions:

1. Wash and roughly chop all vegetables.
2. Add to a blender or food processor.
3. Blend until smooth.
4. Portion into silicone ice cube trays or bags.
5. Freeze until solid and store in freezer for up to 3 months.

P.S. A bigger blender makes this a lot faster. Especially if you're doubling or tripling the recipe.

👶🏻 Toddler-Friendly Tip:

For babies or younger toddlers, choose a milder garlic and onion, and start with smaller amounts. The cubes can be stirred into porridge, pasta sauce, or broth for an easy nutrition boost.
