I love this freezer tempura udon because everything cooks straight from the freezer in 15mins. It's comforting, quick, and the kids always finish their bowls.

Ingredients:
(Serves 2 adults, 2 toddlers)
- 1.2L water
- 2 no-sodium dashi bags
- 1 tbsp soy sauce (adjust to taste)
- 1 tbsp mirin
- Handful of spinach or other greens
- Frozen udon noodles
- Frozen kitsune (sweet tofu skin)
- Frozen kamaboko (fish cake)
- Frozen tempura prawns
Instructions:
1. Bring 1.2L of water to a boil and simmer dashi bags for 5–6 minutes.
2. Taste and only add soy sauce and mirin if you need. Every brand of dashi is different.
3. Add spinach, kitsune, and kamaboko to simmer.
4. Pour boiling water over udon noodles until they're soft. No need to defrost first.
5. Spray oil over tempura prawns and air-fry 15-20mins until golden.
6. Pour hot broth over noodles, serve with prawns, and enjoy immediately.
👶🏻 Toddler-Friendly Tip:
Leave out soy sauce and mirin for younger children. Cut noodles shorter with scissors and cool the broth with a few ice cubes before serving.
