High in protein, light on effort, and endlessly flexible. This everyday udon is one of my go-tos when dinner needs to get done, fast. No bottled sauces, just clean flavour and a quiet little win at the table
Everyday Stir Fry Udon
This humble stir-fry is one of my go-to meals when I need to get dinner on the table fast, stretch my protein, and use up what’s left in the fridge. It’s not fancy, but it always hits the spot. It’s also incredibly flexible - swap the chicken for whatever protein you have on hand, and the veggies for anything you like!

Ingredients:
Main Ingredients:
- Chicken meat, sliced (substitute with any protein)
- 3 garlic cloves, minced
- 1 carrot, shredded
- 6 mushrooms, sliced
- 1 bunch chinese spinach (just leaves)
- 3 packets udon noodles, blanched to loosen
- Water or chicken stock
- Soy sauce, oyster sauce and sugar (to taste)
- Your fav chilli oil (for adults)
Marinade for Meat:
- 1 tbsp corn starch
- 1 tbsp sesame oil
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tsp sugar
Instructions:
- Heat oil in a large stainless steel pan or wok
- Add chicken in a single layer, cook undisturbed to sear
- Add garlic, carrots, and mushrooms one layer at a time, letting the pot dry in between so they brown, not steam
- Deglaze with a cup of water or chicken stock
- Toss in blanched udon noodles. Add more liquid if noodles start looking dry or begin sticking to the pan, you want it saucy but not soupy
- Season with soy sauce, oyster sauce and sugar to taste
- Add leafy greens to wilt, stir to combine and enjoy with your favourite chilli sauce on the side

Remove toddlers portion before adding in the seasoning for adults
