Claypot Chicken Rice (Char’s Signature Version)

This one's close to my heart - my signature claypot chicken rice. I start with a $2.50 chicken from the supermarket and use every part. The skin gets rendered for oil, the bones go into soup, and the meat becomes the star of this dish. It’s full of flavour, family-friendly, and made without seed oils.

Bonus Sauce:

While the rice rests, I make a quick drizzle sauce of dark soy sauce with garlic in oil.
Just before serving, I add chopped spring onion and parsley on top for freshness.

Baby Friendly Tip:

You can set aside a section of plain cooked rice and chicken seasoned with just sesame oil and pepper for younger toddlers. Offer soft pieces or a small drumlet they can hold.
